The star ingredient in many local specialties, from pasta dishes to desserts, are of course the lemons that color the terraces throughout the area, but there’s much more to savor, too. During your trip, you’ll have a chance to discover other outstanding specialties, including delicious cheeses such as mozzarella, ricotta and provolone, and wines produced in the areas of Tramonti, Furore and Ravello.
One of the first courses I can recommend, in addition to the classic tagliolini with lemon, is ndunderi di Minori: gnocchi made with flour, fresh ricotta and eggs, topped with a succulent meat sauce and then baked with chunks of provola cheese.
Also not to be missed are the local fish-based first courses, such as scialatielli all'Amalfitana, a characteristic type of fresh pasta topped with fresh cherry tomatoes and seafood such as cuttlefish, shrimp, mussels and clams.
An essential stop on your journey through the cuisine of Amalfi is the colatura di alici di Cetara, a delicious condiment made by fermenting salted anchovies, sensational paired with spaghetti. And remember that Cetara anchovies are also delicious fried or marinated!
Still on the subject of seafood recipes, you might also like to try the rich totani e patate alla praianese, a traditional dish of Praiano featuring squid and potatoes cooked with garlic, oil and chili pepper.
And finally, let's move on to the desserts!
Sfogliatella di Santarosa di Conca dei Marini is an authentic pastry masterpiece dedicated to the patron saint of the monastery of the same name. The recipe, which originated in the 1600s, is made with a crisp pastry, available in a plain version with ricotta and custard, or in a variant with vanilla, candied fruit and black cherries.
Equally unmissable is the Delizia al Limone, a small, soft sponge cake filled and topped with a delicately flavored lemon cream.
And to digest all this, a little glass of the famous limoncello!
Let me leave you with an interesting fact: If you fancy trying a really original dish, don't miss the eggplant with chocolate in Maiori. This surprising combination of flavors, bizarre though it may sound, is actually the result of a lengthy culinary tradition, celebrated during the feast of Santa Maria a Mare in August. Dipped in the magic of chocolate, eggplant becomes truly irresistible.
